Ingredients
1/2 cup chopped onion
1/2 cup diced red bell pepper
1 cup egg substitute
1 cup (8-fl-oz) Glucerna® Homemade Vanilla Shake
3/4 cup part-skim ricotta cheese
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons Parmesan cheese
1 cup cooked lean turkey sausage, crumbled or chopped
2 tablespoons chopped sundried tomatoes packed in oil and drained
2 tablespoons fresh chopped parsley
Directions
- Preheat the oven to 325 degrees F. Lightly mist an 8-inch oven-safe glass or ceramic baking dish with nonstick vegetable oil spray.
- In a microwave-safe bowl, combine the onions and red bell pepper with 2 teaspoons of water, cover the bowl and microwave for 2 minutes on high. Drain if necessary and set aside.
- In a large mixing bowl, combine the egg substitute, Glucerna and ricotta cheese and whisk to blend. Add the salt, pepper, Parmesan cheese, sausage, sundried tomatoes, parsley and steamed onions and peppers.
- Pour the mixture into the prepared baking dish and bake for 30 to 35 minutes or until it is firm to the touch.
- Cool for 5 minutes, cut into pieces, and serve warm.
